For the final edition of this blog series, I will talk about perhaps the most common aspect of the topic- our dear society. Therefore, I will not waste words trying to explain what is wrong, neither will I mention how to right it. I will simply mention the efforts that are already underway because luckily once again, this is one of the aspects that has had some light shed on to it in recent years. HOW TO MAKE CHICKEN BREAD

From social media, you might have seen that the chicken bread or as some people like to call it - fishtail bread has become quite famous for being a delicious evening snack with of course your favorite cup of tea, because chaye first, let’s just accept that. If you are a chaiholic, you will agree because I am a huge chaye lover as well. High-five!


Today, we are bringing to you the finest recipe of chicken bread which you can not resist making again. The ingredients are usually available at home, so most probably you will not have to rush to your nearby market, unless and until you are missing one or two things, which we hope will not be the case.


Let’s just dive into the finger-licking recipe!


Ingredients:


For dough:


2 cups flour

1 tsp yeast

1 egg

2 tbsp oil

1 tsp grounded sugar 

1 tsp salt

1 cup warm milk

2 tbsp warm water


For chicken bread filling:


1 and ½ cup shredded chicken 

1 cup milk

2 tbsp flour

1 large onion

1 tsp ground black pepper

½ tsp garam masala

1 tsp salt

2 green chillies 

2 tbsp coriander

2 tsp sesame seed

2 tbsp butter

1 egg for coating


Procedure: 


For dough, we will mix sugar in warm water and then we will add yeast. Mix it well and put it aside. In a large bowl, add flour, salt and mix these dry ingredients. After this, add prepared yeast-sugar water and the egg in the dry ingredients and mix all this well. Now keep on adding the milk in the dough mixture and knead it until it becomes a perfect dough. Put the dough in another big bowl, coat it with oil and cover the bowl with a cling sheet. Let it rest in a warm place for 2 hours. 


Moving on to chicken bread filling, put butter in a medium-sized pan on a medium flame, add onion and mix it for 1-2 minutes (do not let them turn into golden brown). Now mix flour in it and cook it for 2-3 minutes. Add milk, in quarters and mix. Cook it for 2-3 minutes, till it reaches a good honey-like consistency. Once you have reached the desired consistency, toss in salt, black pepper and garam masala and mix the mixture again. Now put all the shredded chicken in the already cooking mixture and cook for 5 minutes. In the end, add diced green chillies and coriander and mix it one last time and let it cool for 15 mins.


Now take out the dough, which would be doubled in size by now, and knead it on a floured base and take out the air from the dough. Once kneaded, make a good round shape of the kneaded dough.  Divide the dough in two parts, if you want to make two small chicken-breads. Roll the dough in a rectangular shape, make it as long as you like, but make sure to keep the width 2-3 cm thick. Once done, spread the filling in the rectangular shape but leave a good space on both sides to cut snippets to make a fishtail structure. Cut the dough from the sides with a knife, make sure you have cut an equal amount of sides. Overlap each side to make a braid-like structure. 


Preheat the oven for around 30 minutes. Take a baking tray, brush it with a little oil and place your chicken bread in it. Now coat the entire chicken bread with the beaten egg and sprinkle sesame seeds as you like. Place your chicken bread in the preheated oven and let it bake for around 20 mins on medium heat. After it's baked, take it out, coat it with melted butter to soften the chicken bread more. 


Now your chicken bread is ready. Cut it in the pieces and serve as you like with any sauce of your choice.
